Cuts we Got From Steer #1

Here is a rough inventory of what we received with Steer #1:

RIBEYE: 19 LBS (Approximate)
STRIP: 17.48 LBS, 2 PIECES
SIRLOIN: 18.68 LBS, 2 PIECES
TENDERLOIN: 8.8 LBS, 2 PIECES
FLANK: 5.21, 4 PIECES (For some reason they cut my flanks)
SKIRT: 2.07 LBS 2 pc
BRISKET: 16.65 LBS, 2 PIECES
SHORT RIB: 37.46 LBS, MANY PIECES, DIFFERENT SIZES, (Some of the short ribs, the fatter ones, are chuck short ribs, which are different from the flanken short ribs.)
BBQ RIBS: 7.12LBS, 2 PIECES, (These were supposed to be in the ofal box, not to be included in the gross weight)
CHUCK ROAST: 26.15LBS, 2 LARGE ROASTS
KABOB MEAT: 17.48LBS, MANY SMALL PIECES (all non-tough cuts go into this, mixed little pieces of tender types)
TRI TIP: 3.32LBS, 2 PIECES
BEEF SHANK: 28.14LBS, MANY PIECES. BONE again, normally left in even in boneless process
HAMBURGER: 243LBS, ONE SHORT TUBE APPROX W[, these are not individually weighted out in 5 lb tubes, we should weigh some of them

Ofal
LIVER: 7.96LBS, 4 PIECES
HEART: 4.84LBS, 2 PIECES
KIDNEY: 2.23LBS
TAIL: 6.36LBS
TONGUE: 3.56LBS, 2 PIECES, (the butcher definitely a mistake to halve the tongue)
MARROW BONES: 25LBS

This is the inventory we started with. There are a few things we would choose to do differently next time as far as butchering, which I will describe at some point soon. There were also some screw ups with the first delivery; we were missing a whole box of meat, about 50lbs. We received a box of criovac rib eyes and we were missing about 30 lbs of burger, as well as some other cuts that we can’t figure out yet. All the big chunks are here.
