Short Ribs: Braised, Glazed, Sweet, and Hot

Today we are making braised glazed short ribs. Here’s the recipe:

12LBS Short Ribs


3 Cups Soy Sauce

3 Cups White Vinegar

1LB Dark Brown Sugar

3 TBL Ground Ginger

2 TBL Ground Black Pepper

1 Bunch chopped scallions

6 cloves chopped garlic

pinch of cinnamon

pinch of clove

Marinate the short ribs at room temperature for 2 hrs. Sear ribs in a little olive oil. Make sure they are very very caramelized. When brown, pour a little marinade over them in a shallow pan (we used a 2″ deep hotel pan) and cover with foil. Bake in a 300 oven for 4-5 hours. After a couple hours, baste the ribs occasionally with the marinade. Allow to cool in the pan, keeping some of the liquid with the cooling ribs. When you are ready to serve them, place orders in a very hot oven until hot and crispy. Yummm.
